Ingredients:

– 1 cup finely chopped almonds

– Raspberry jam, for filling

– Powdered sugar, for dusting

Instructions:


1. Preheat your oven to 350F 175C. Line a baking sheet with parchment paper.

2. In a mixing bowl, cream the softened butter and powdered sugar together until light and fluffy.

3. Stir in the vanilla extract and salt. Gradually add the all-purpose flour and chopped almonds, mixing until well combined.

4. Shape the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.

5. Use your thumb to make an indentation in the center of each cookie ball. Fill each indentation with a small amount of raspberry jam.

6. Bake the cookies for about 15-18 minutes, or until the edges are slightly golden brown. Keep an eye on them to avoid overcooking.
