Ingredients:

Instructions:
Crust:
1. Preheat your oven to 350F 175C.
2. Line a 9×9 inch baking pan with parchment paper for easy removal.
3. In a bowl, mix graham cracker crumbs, sugar, and melted butter until well combined.
4. Press this mixture firmly into the bottom of the prepared pan to create a level crust.
5. Bake for 10 minutes and then let it cool.
Blueberry Layer:
6. In a small saucepan over medium heat, combine blueberries, sugar, lemon juice, and cornstarch.
7. Stir frequently until the mixture thickens and blueberries start breaking down, roughly 5-7 minutes. Set aside to cool.
Lemon Cream Cheese Layer:
8. In a large bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy.
9. Add sour cream, eggs, lemon zest, lemon juice, and vanilla extract. Mix until everything is well combined.
10. Pour half of the cream cheese mixture over the cooled crust.
11. Evenly spoon the cooled blueberry mixture over the cream cheese layer.
12. Pour the remaining cream cheese mixture over the blueberry layer and smooth the top.
Assembly:
13. Bake in the oven for 35-40 minutes or until the edges appear set with the center just slightly jiggly.
14. Cool to room temperature before refrigerating for at least 4 hours, or overnight for best results.
Topping:
15. When ready to serve, generously spread whipped cream over the cheesecake bars.
16. Decorate with lemon slices, fresh blueberries, and white chocolate shavings for that perfect finishing touch.
