Ingredients:

– 2 1/2 cups granulated sugar

– 4 large eggs, room temperature

– 1 cup unsalted butter, softened

– 1 teaspoon salt

– 6 cups powdered sugar

– 3 cups all-purpose flour

– Gel food coloring: red, orange, yellow, green, blue, purple

– 1 1/2 teaspoons baking soda

– 2 teaspoons vanilla extract

– 1 cup buttermilk, room temperature

– 1 1/2 teaspoons baking powder

– 2 cups cream cheese, softened

– 1 cup unsalted butter, softened for frosting

– Assorted rainbow sprinkles

– Edible glitter optional

Instructions:

1. Preheat your oven to 350F 175C. Grease and flour six 8-inch round cake pans.

2. In a large bowl, sift the flour, baking powder, baking soda, and salt together.

3. In another bowl, beat the sugar and softened butter until light and fluffy. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

4. Gradually combine the dry ingredients with the wet mixture, alternating with the buttermilk, mixing until just incorporated.

5. Divide the batter evenly into six bowls. Add a different gel food coloring to each bowl, mixing well until the colors are vibrant.

6. Pour the colored batter into the prepared cake pans, one color per pan.

7. Bake each layer for 15-20 minutes, or until a toothpick inserted in the center comes out clean. Once baked, cool the cakes in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

For the Cream Cheese Frosting:

1. In a mixing bowl, combine the softened cream cheese and butter. Beat until smooth and creamy.

2. Gradually add the powdered sugar along with the vanilla extract, mixing until fluffy.

Assembly:

1. Start by placing the red layer on a serving plate and spread a layer of cream cheese frosting over the top.

2. Continue layering with the orange, yellow, green, blue, and purple layers, adding frosting in between each layer.

3. Apply the remaining cream cheese frosting to the top and sides of the cake.

4. Finish by decorating with rainbow sprinkles and a sprinkle of edible glitter for that extra luxurious touch!
