Sheet Pan Salmon with Roasted Vegetables

Ingredients:

– 1 pound salmon fillet, skin-on

– 1 tablespoon olive oil

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

– 1 cup broccoli florets

– 1 cup baby carrots

– 1/2 cup red onion, thinly sliced

– 1 tablespoon honey

– 1/2 teaspoon Dijon mustard


Instructions:

1. Preheat oven to 400F 200C.

2. Line a baking sheet with parchment paper.

3. Pat the salmon fillet dry with paper towels.

4. Brush the salmon with olive oil and season with salt and pepper.

5. In a large bowl, combine the broccoli, carrots, and red onion. Drizzle with honey and Dijon mustard and toss to coat.

6. Spread the vegetables on the prepared baking sheet.

7. Place the salmon fillet on top of the vegetables.

8. Bake for 15-20 minutes, or until the salmon is cooked through and the vegetables are tender.

9. Let stand for 5 minutes before serving.
