Ingredients:
– 1 cup buttermilk
– 2 cups all-purpose flour

Instructions:
1. Preheat your oven to 350F 175C and line a muffin tin with paper liners or generously grease it.
2. In a large mixing bowl, whisk together the buttermilk, melted butter, eggs, and vanilla extract until well combined.
3. In another bowl, combine the all-purpose flour, brown sugar, granulated sugar, baking powder, baking soda, and salt.
4. Slowly add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix to keep the muffins fluffy.
5. Fold in the diced apples and chopped pecans, if using.
6. Fill each muffin cup about three-quarters full with the batter.
