Wild Raspberry Mousse
Ingredients:
1 1/2 cups fresh or frozen raspberries
1/4 cup granulated sugar
1 tablespoon lemon juice
1 cup heavy cream
1/4 cup powdered sugar
1 teaspoon vanilla extract
1 tablespoon gelatin powder
3 tablespoons water
Instructions:
Prepare the Raspberry Puree:
In a blender or food processor, combine the raspberries, granulated sugar, and lemon juice. Blend until smooth.
Strain the raspberry puree through a fine mesh sieve to remove the seeds. Set aside.
Prepare the Gelatin:
In a small bowl, sprinkle the gelatin powder over the water and let it bloom for about 5 minutes.
After blooming, gently heat the mixture in the microwave for about 10-15 seconds or until fully dissolved. Do not overheat. Let it cool slightly.
Make the Mousse:
In a medium bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
Gently fold the raspberry puree into the whipped cream until well combined.
Fold the dissolved gelatin into the raspberry mixture, making sure its evenly distributed.
Chill:
Spoon the mousse into serving glasses or bowls.
Refrigerate for at least 2 hours, or until set.
Serve:
Garnish with fresh raspberries, mint leaves, or a dollop of whipped cream if desired.
