1 cup white chocolate chips or chopped white chocolate
1/4 cup heavy cream
1/2 cup almond meal or finely ground almonds
1/4 tsp almond extract optional, for extra almond flavor

1. Make the Ganache:
In a heatproof bowl, combine the white chocolate and heavy cream.
Melt over a double boiler or microwave in 20-second intervals, stirring until smooth and well combined.
Stir in the almond meal and almond extract if using until well incorporated.
Cover and refrigerate for at least 1-2 hours, or until the mixture is firm enough to handle.
2. Shape the Truffles:
Using a small spoon or a melon baller, scoop out small portions of the ganache and roll into balls.
Place the truffles on a baking sheet lined with parchment paper.
