Triple Chocolate Cheesecake

Ingredients:
– 1/2 cup heavy cream
– 4 oz semi-sweet chocolate, chopped
– 1 1/2 cups chocolate cookie crumbs like Oreo or chocolate graham crackers
– 1/4 cup sugar
– 1 cup sour cream
– 3/4 cup granulated sugar
– 1/2 cup cocoa powder
– 3 large eggs
– 1 tsp vanilla extract
– 1/2 cup unsalted butter, melted
– 3 8 oz packages cream cheese, softened
– 1/2 cup semi-sweet chocolate chips, melted
– 1/2 cup heavy cream for ganache
Instructions:
1. Prepare the Crust: Preheat your oven to 325F 163C. In a large mixing bowl, combine the chocolate cookie crumbs, sugar, and melted butter until everything is well mixed. Firmly press the mixture into the bottom of a 9-inch springform pan to form an even crust. Bake in the preheated oven for 8-10 minutes, then remove and let it cool.
2. Make the Cheesecake Filling: In a separate bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy. Next, add the sour cream, cocoa powder, and vanilla extract, mixing until fully combined. Incorporate the eggs one at a time, ensuring to mix well after each addition. Finally, stir in the melted chocolate and heavy cream until the filling is perfectly smooth and uniform.
3. Bake the Cheesecake: Pour the cheesecake filling over the cooled crust in the springform pan. Bake for 5060 minutes, or until the edges are set but the center remains slightly jiggly.
