Tomato Basil Salmon
Ingredients:
4 salmon fillets2 cups cherry tomatoes, halved1/4 cup fresh basil leaves, chopped2 tablespoons olive oil2 garlic cloves, minced1 tablespoon balsamic vinegarSalt and pepper to tasteLemon wedges for serving
Instructions:
Preheat oven to 375F 190C and line a baking sheet with parchment paper.Place salmon fillets on the baking sheet and season with salt and pepper.In a bowl, mix cherry tomatoes, olive oil, garlic, balsamic vinegar, and basil.Spoon the tomato mixture over the salmon fillets, ensuring they are well covered.Bake for 15-20 minutes or until the salmon is cooked through and flakes easily with a fork.Serve with lemon wedges for a fresh finish.
