Tiramisu Cheesecake

Indulge in this creamy, no-bake Tiramisu Cheesecake, blending the iconic flavors of tiramisu with the rich texture of a cheesecake. A coffee-soaked ladyfinger layer, luscious mascarpone filling, and a cocoa cookie crust make this dessert a must-try for tiramisu lovers!

Ingredients

For the Cookie Crust:

250 g graham cookies or Digestive cookies

2 tbsp Dutch processed unsweetened cocoa powder

75 g butter 杻

For the Cheesecake Filling:

250 ml strong black coffee

1 tbsp Amaretto optional

600 g cream cheese 燎

165 g mascarpone cheese 燎

150 g powdered sugar

1 tsp vanilla paste

360 g heavy cream 380 ml

pack of lady fingers

For the Topping:

230 g heavy cream 250 ml

2 tbsp powdered sugar

tsp vanilla paste

Dutch processed unsweetened cocoa powder for dusting

Instructions


Step 1: Prepare the Cookie Crust

1 Brew strong black coffee and mix in Amaretto optional. Let it cool.

2 In a food processor, blend graham crackers/Digestive cookies and cocoa powder until fine.

3 Melt the butter and blend it with the cookie crumbs.

4 Press the mixture into a lined 23 cm / 9-inch springform pan and refrigerate.

Step 2: Cheesecake Filling

5 Cream the cream cheese on low speed for 1 minute using a hand mixer or stand mixer with a paddle attachment.

6 Add mascarpone, powdered sugar, and vanilla paste. Mix on medium-high speed until smooth, about 1 minute. Scrape the sides and mix for 30 more seconds.

7 Slowly add heavy cream and whisk until stiff peaks form.

8 Spread half of the cheesecake filling over the crust.

Step 3: Add the Coffee-Soaked Ladyfingers

9 Quickly dip ladyfingers in the cooled coffee one dip per side.

Arrange the dipped ladyfingers in a single layer over the cheesecake filling.

11 Spread the remaining cheesecake filling on top, smooth with a spatula, cover with cling film, and refrigerate for 8 hours or overnight.

Step 4: Decoration

12 Whip heavy cream, powdered sugar, and vanilla paste until stiff peaks form. Spread on top of the cheesecake.

13 Before serving, dust the top with cocoa powder. For clean slices, dip a knife in hot water, dry, and slice the cheesecake.
