Mini Oreo Cheesecakes

These no-bake Mini Oreo Cheesecakes are perfect for cookies and cream lovers! Featuring an Oreo cookie crust, creamy Oreo cheesecake filling, decadent chocolate ganache, and a topping of whipped cream and mini Oreos, these bite-sized treats are delightful.

Ingredients

Oreo Cookie Crust:

2 cups Oreo cookie crumbs

2 tbsp granulated sugar

6 tbsp salted butter, melted 杻

Oreo Cheesecake Filling:

16 oz cream cheese, room temperature 燎

1 cups powdered sugar

2 tsp vanilla extract

1 cups heavy cream

1 cup chopped Oreo cookies

Chocolate Ganache:

cup semisweet chocolate chips

cup heavy cream

Whipped Cream:

cup heavy cream

2 tbsp powdered sugar

tsp vanilla extract

Additional Ingredients:

2 tbsp Oreo cookie crumbs

24 mini Oreo cookies


Instructions

Step 1: Prepare the Oreo Cookie Crust

1 In a bowl, combine Oreo cookie crumbs, granulated sugar, and melted butter.

2 Press about 1 tablespoon of the mixture into mini cheesecake pans to form the crust. Set aside.

Step 2: Make the Cheesecake Filling

3 Use an electric hand mixer to cream the room temperature cream cheese, powdered sugar, and vanilla extract until smooth.

4 Slowly add the heavy cream, whipping until the mixture thickens and becomes fluffy.

5 Gently fold in chopped Oreo cookies.

6 Pipe the cheesecake mixture onto the Oreo crusts using a piping bag, filling slightly above the pan.

7 Chill the cheesecakes in the refrigerator for at least 12 hours or overnight.

Step 3: Prepare the Chocolate Ganache

8 Microwave semisweet chocolate chips and heavy cream in 15-second intervals, stirring in between, until smooth. Set aside to cool slightly.

Step 4: Whip the Cream

9 In a mixing bowl, whip heavy cream, powdered sugar, and vanilla extract until medium-stiff peaks form. Fill a piping bag fitted with a Wilton 1M tip.

Step 5: Assemble the Mini Cheesecakes

After chilling, remove cheesecakes from the pan.

11 Spoon or pipe cooled ganache on top of each cheesecake.

12 Pipe a swirl of whipped cream over the ganache.

13 Sprinkle with Oreo crumbs and top with a mini Oreo cookie.

Chill Time: 12 hrs

Yield: 24 mini cheesecakes
