Teriyaki Chicken and Broccoli
Ingredients:
2 boneless, skinless chicken breasts, cut into bite-sized pieces
2 cups broccoli florets
2 tbsp olive oil
1/3 cup soy sauce
3 tbsp honey
2 tbsp rice vinegar
2 garlic cloves, minced
1 tsp ginger, grated
1 tbsp cornstarch mixed with 2 tbsp water
Sesame seeds for garnish
Instructions:
1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add chicken pieces and cook until golden and fully cooked, about 5-6 minutes. Remove and set aside.
2. In the same skillet, add another tablespoon of olive oil and sauté the broccoli florets for 3-4 minutes until tender-crisp. Remove and set aside.
3. In the skillet, whisk together soy sauce, honey, rice vinegar, garlic, and ginger. Bring the mixture to a simmer.
4. Stir in the cornstarch slurry and let the sauce thicken for 1-2 minutes.
5. Return the cooked chicken and broccoli to the skillet, tossing them in the teriyaki sauce until well coated.
6. Garnish with sesame seeds and serve immediately.
