Grilled Chicken with Pineapple Salsa
Ingredients:
2 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp paprika
1 tsp garlic powder
1/2 tsp chili powder
Salt and pepper to taste
For the Pineapple Salsa:
1 cup fresh pineapple, diced
1/2 cup tomato, diced
1/4 cup red onion, diced
1 tbsp fresh cilantro, chopped
1 tbsp lime juice
Salt to taste
Instructions:
1. Preheat grill or grill pan to medium-high heat.
2. Rub the chicken breasts with olive oil, paprika, garlic powder, chili powder, salt, and pepper.
3. Grill the chicken for 5-6 minutes on each side, or until fully cooked and golden.
4. In a bowl, combine pineapple, tomato, red onion, cilantro, lime juice, and a pinch of salt to make the salsa.
5. Serve the grilled chicken with pineapple salsa on top or on the side.
