Tender Slow Cooker Pineapple-Glazed Pork Loin

Ingredients:

1 3-4 lb pork loin

1 can 20 oz crushed pineapple, with juice

1/2 cup brown sugar

1/4 cup soy sauce

1/4 cup apple cider vinegar

2 cloves garlic, minced

1 teaspoon ground ginger

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/2 teaspoon salt

1 tablespoon cornstarch optional, for thickening


2 tablespoons water optional, for thickening

Fresh cilantro or green onions for garnish optional

Directions:

Place the pork loin in the slow cooker.

In a mixing bowl, combine crushed pineapple with juice, brown sugar, soy sauce, apple cider vinegar, garlic, ginger, smoked paprika, black pepper, and salt. Stir well.

Pour the mixture over the pork loin, ensuring its evenly coated.

Cover and cook on LOW for 6-8 hours or on HIGH for 4-5 hours, until the pork is tender and easily shredded.

Optional: To thicken the sauce, mix cornstarch and water in a small bowl, then stir it into the slow cooker in the last 30 minutes of cooking.

Slice or shred the pork and spoon the pineapple glaze over the top.

Garnish with fresh cilantro or green onions, if desired. Serve with rice, mashed potatoes, or roasted vegetables.
