Swig Sugar Cookies and Frosting
Soft Swig Sugar Cookies with Vanilla Frosting
Ingredients for Cookies:
1 cup butter, softened
3/4 cup vegetable oil
1 1/4 cup sugar
3/4 cup powdered sugar
2 tablespoons water
2 eggs
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1 teaspoon salt
5 1/2 cups all-purpose flour
Ingredients for Frosting:
1/2 cup butter, softened
3/4 cup sour cream
4 cups powdered sugar
1 teaspoon vanilla extract
Food coloring optional
Directions:
Preheat your oven to 350F 175C.
In a large mixing bowl, cream together the butter, vegetable oil, sugar, powdered sugar, and water until light and fluffy.
Add eggs one at a time, mixing well after each addition.
In a separate bowl, whisk together the flour, baking soda, cream of tartar, and salt. Slowly add the dry ingredients to the wet mixture, stirring just until combined.
Roll the dough into 1.5-inch balls and place them on a baking sheet. Use a glass dipped in sugar to flatten the cookies slightly.
Bake for 8-10 minutes or until the edges are lightly golden. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
To make the frosting, cream together the butter and sour cream. Gradually add powdered sugar, beating until smooth and fluffy. Stir in vanilla extract and food coloring, if desired.
Once the cookies are completely cooled, frost generously and enjoy!
