Decadent Mudslide Blondies with Chocolate and Espresso

Ingredients for Blondies:

1 cup unsalted butter, melted

2 cups light brown sugar, packed

2 large eggs

1 tablespoon vanilla extract

2 cups all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup chocolate chips

1/2 cup white chocolate chips

2 tablespoons espresso powder

Ingredients for Mudslide Frosting:

1/2 cup unsalted butter, softened


2 cups powdered sugar

2 tablespoons Kahlua

1 tablespoon heavy cream or more if needed

1/4 cup melted dark chocolate for drizzling optional

Directions:

Preheat oven to 350F 175C. Line a 9×13-inch baking pan with parchment paper or lightly grease it.

In a large bowl, mix melted butter and brown sugar until smooth. Add eggs one at a time, followed by vanilla extract.

In a separate bowl, whisk together flour, baking powder, salt, and espresso powder. Gradually add the dry ingredients to the wet mixture and stir until combined.

Fold in chocolate chips and white chocolate chips.

Spread the batter evenly into the prepared baking pan. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let cool completely.

To make the frosting, beat butter and powdered sugar together until smooth. Add Kahlua and heavy cream, beating until light and fluffy.

Once blondies are cooled, spread the frosting evenly over the top. Drizzle melted dark chocolate on top if desired. Slice and serve.
