Strawberry Crunch Shortcake Cookies

Ingredients
Strawberry Crunch Topping:
1 box 3 oz instant vanilla pudding mix
1 box 3 oz strawberry Jello mix
cup unsalted butter, room temperature divided
cup all-purpose flour divided
Cream Cheese Frosting:
8 oz cream cheese, room temperature
cup unsalted butter, room temperature
3 cups powdered sugar
1 tsp vanilla extract
Strawberry Cookie:
1 box 15.25 oz strawberry cake mix
2 large eggs
cup vegetable oil
Instructions
Make the Strawberry Crunch Topping:
1 Preheat your oven to 350F 175C.
2 Prepare the vanilla crunch: In one bowl, mix the vanilla pudding mix with cup butter and cup flour until a thick dough forms.
3 Prepare the strawberry crunch: In another bowl, repeat the process with the strawberry Jello mix.
4 Lightly combine both doughs to create a marbled effect.
5 Spread the mixture flat on a parchment-lined baking sheet. Bake for 8-11 minutes or until set.
6 Let the mixture cool to room temperature or chill in the freezer to speed up the process.
7 Once cooled, crumble into small strawberry crunch pieces. Set aside.
Make the Cream Cheese Frosting:
1 In a mixing bowl, combine cream cheese, unsalted butter, powdered sugar, and vanilla extract.
2 Using a hand mixer or stand mixer, beat until smooth and fluffy about 2 minutes. Set aside.
Bake the Cookies and Assemble:
1 Preheat the oven to 350F 175C.
2 In a large mixing bowl, combine the strawberry cake mix, eggs, and vegetable oil until a thick dough forms.
3 Line a baking sheet with parchment paper. Using a cup scoop, place dough portions spaced apart on the sheet.
4 Bake for 10-11 minutes or until the cookies are set.
5 Let the cookies cool completely on a wire rack.
6 Once cooled, frost the cookies generously with the cream cheese frosting.
7 Sprinkle the strawberry crunch crumbles on top of each cookie.
8 Chill the cookies in the fridge for 1 hour before serving.
