Strawberry Crunch Cheesecake Bites
Ingredients:
For the Crust:
1 cup graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the Cheesecake Filling:
16 oz cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
2 large eggs
1 cup sour cream
For the Strawberry Topping:
1 cup fresh strawberries, diced
1/2 cup strawberry glaze or preserves
1/4 cup strawberry crunch topping see below
For the Strawberry Crunch Topping:
1 cup strawberry-flavored cereal like Strawberry Crunch
1/4 cup unsalted butter, melted
2 tablespoons granulated sugar
Instructions:
Prepare the Crust:
Preheat your oven to 325F 163C. In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated. Press this mixture firmly into the bottom of a 9×9-inch or 8×8-inch square baking dish. Bake for 10 minutes, then remove from the oven and set aside to cool.
Make the Cheesecake Filling:
In a large mixing bowl, beat the softened cream cheese until smooth. Add the sugar and vanilla extract, mixing until well combined. Add eggs one at a time, mixing on low speed after each addition to avoid overmixing. Stir in the sour cream until fully combined. Pour the cheesecake filling over the cooled crust and spread evenly.
Bake the Cheesecake:
Bake in the preheated oven for 30-35 minutes, or until the center is set but still has a slight jiggle. Turn off the oven, leaving the cheesecake inside with the door ajar for 1 hour to cool slowly and help prevent cracking. Remove and let cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
Prepare the Strawberry Crunch Topping:
In a small bowl, combine the strawberry-flavored cereal with the melted butter and granulated sugar. Mix until well-coated. Spread the mixture on a baking sheet and bake at 350F 175C for 5-7 minutes, or until slightly golden. Let cool completely.
Assemble the Cheesecake Bites:
Once the cheesecake is fully chilled, top with diced strawberries and drizzle with strawberry glaze. Sprinkle the strawberry crunch topping evenly over the top.
