Strawberry Chocolate Ice Cream Cake
Ingredients:
For the Cake Layers:
– 2 cups all-purpose flour
– 1 cups sugar
– cup unsweetened cocoa powder
– 1 teaspoons baking powder
– 1 teaspoons baking soda
– teaspoon salt 蓼
– 2 large eggs 讀
– 1 cup whole milk 拏
– cup vegetable oil
– 2 teaspoons vanilla extract
– 1 cup boiling water
For the Ice Cream Layer:
– 1.5 quarts strawberry ice cream, softened
For the Chocolate Ganache:
– 1 cup heavy cream 拏
– 12 oz dark chocolate, chopped
For Garnish:
– Fresh strawberries, sliced
– Chocolate curls or shavings
Instructions:
Prepare the Cake Layers:
1. Preheat the oven to 350F 175C. Grease and line two 9-inch round cake pans.
2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
3. Add the eggs, milk, oil, and vanilla extract. Mix until well combined, then stir in boiling water. The batter will be thin, but thats how you want it!
4. Divide the batter between the two pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Allow the cakes to cool completely.
Assemble the Ice Cream Cake:
1. Once the cakes are cool, place one layer on a serving plate.
2. Spread the softened strawberry ice cream evenly over the top. Place the second cake layer on top of the ice cream layer.
3. Freeze the cake for at least 2 hours, or until the ice cream is firm.
Make the Ganache:
1. Heat the heavy cream in a saucepan over medium heat until it starts to simmer.
2. Remove from heat and pour over the chopped dark chocolate in a heatproof bowl. Let it sit for 5 minutes, then stir until smooth and silky.
Finish the Cake:
1. Pour the chocolate ganache over the top of the cake, letting it drip beautifully down the sides.
2. Garnish with fresh strawberry slices and chocolate shavings.
3. Freeze for another 30 minutes to allow the ganache to set, then slice and enjoy this decadent treat!
