Steak with Mushroom Sauce on Pasta
Ingredients:
2 8 oz sirloin steaks
Salt and black pepper to taste
2 tablespoons olive oil
2 tablespoons butter
3 cloves garlic, minced
8 oz cremini or white mushrooms, sliced
cup beef broth
cup heavy cream
1 tablespoon Worcestershire sauce
teaspoon dried thyme
12 oz fettuccine or pasta of choice
2 tablespoons grated Parmesan optional
Fresh parsley, chopped, for garnish
Directions:
Bring a large pot of salted water to a boil and cook pasta according to package directions. Drain and set aside.
Season steaks generously with salt and pepper on both sides.
In a skillet over medium-high heat, add olive oil. Sear steaks for 34 minutes per side depending on thickness for medium-rare. Remove and let rest.
In the same pan, reduce heat to medium and add butter. Sauté garlic for 1 minute, then add mushrooms. Cook until mushrooms are golden brown, about 57 minutes.
Pour in beef broth, heavy cream, Worcestershire sauce, and thyme. Stir and simmer for 56 minutes until sauce thickens slightly.
Slice steaks thinly against the grain.
Toss the cooked pasta with half of the mushroom sauce. Plate pasta, top with steak slices, and drizzle remaining sauce over the top.
Garnish with Parmesan and parsley if desired. Serve warm.
