Steak Bites and Fettuccine in Garlic Butter Sauce

Ingredients:

For the Steak Bites:

1 lb 450g sirloin steak, cut into bite-sized pieces

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika

For the Fettuccine and Garlic Butter Sauce:

12 oz 340g fettuccine pasta

4 tablespoons unsalted butter

3 cloves garlic, minced

1/2 cup heavy cream

1/3 cup grated Parmesan cheese

2 tablespoons chopped parsley optional, for garnish

Salt and pepper to taste

Directions:


Cook the Pasta:

Bring a large pot of salted water to a boil. Cook the fettuccine according to the package instructions until al dente. Reserve 1/2 cup of pasta water and drain the rest.

Cook the Steak Bites:

Heat olive oil in a large skillet over medium-high heat.

Season the steak bites with salt, black pepper, and smoked paprika.

Add the steak bites to the skillet and cook for 2-3 minutes per side, or until browned and cooked to your desired doneness. Remove the steak bites and set aside.

Make the Garlic Butter Sauce:

In the same skillet, reduce the heat to medium and add the butter.

Once melted, sauté the minced garlic for 1-2 minutes until fragrant.

Stir in the heavy cream, Parmesan cheese, and reserved pasta water as needed to create a creamy sauce. Simmer for 2-3 minutes.

Combine and Serve:

Add the cooked fettuccine to the skillet and toss to coat in the garlic butter sauce.

Return the steak bites to the skillet and gently mix with the pasta.

Garnish with chopped parsley and serve immediately.
