Ingredients:

– 3-4 tablespoons water adjust for desired consistency

– 2 cups powdered sugar
– 1 tablespoons meringue powder
– Food coloring optional

Instructions:
1. Preheat your oven to 350F 175C. Prepare a baking sheet by lining it with parchment paper or a silicone mat.
2. In a medium bowl, combine the flour, baking powder, and salt by whisking them together.
3. In a large bowl, beat the softened butter and granulated sugar together until the mixture is light and fluffy, which usually takes about 2-3 minutes.
4. Add in the egg and vanilla extract, mixing until everything is well combined and smooth.
5. Gradually mix the dry ingredient mixture into the butter mixture. Combine until just incorporated; be careful not to overmix.
6. Wrap the cookie dough in plastic wrap and chill it in the refrigerator for at least 30 minutes, which helps with easier rolling later.
