Rainbow Layer Cake

Ingredients:
– 2 cups 250g all-purpose flour
– 2 tsp baking powder
– 1 cup 200g granulated sugar
– cup 120ml vegetable oil
– 3 tbsp heavy cream or milk
– 2 large eggs
– 1 cup 240ml buttermilk
– 6 cups 750g powdered sugar
– tsp baking soda
– tsp salt
– 2 tsp vanilla extract
– Gel food coloring red, orange, yellow, green, blue, purple
– 2 cups 450g unsalted butter, softened
– Sprinkles
– Chocolate cookies optional
Instructions:
1. Preheat your oven to 350F 175C. Prepare six 8-inch round cake pans by greasing and flouring them or lining them with parchment paper to prevent sticking.
2. In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.
3. In another mixing bowl, combine the granulated sugar, vegetable oil, eggs, buttermilk, and vanilla extract. Whisk these wet ingredients together until smooth.
4. Gradually pour the wet mixture into the dry ingredients, stirring until you achieve a smooth batter.
5. Divide this vibrant batter evenly among six bowls. Add a few drops of gel food coloring to each bowlred, orange, yellow, green, blue, and purpleand stir each bowl until the colors are fully incorporated.
6. Pour each colored batter into its prepared cake pan and bake in the preheated oven for 18-22 minutes. The cakes are ready when a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then carefully transfer them to wire racks to cool completely.
7. Prepare the frosting by beating the softened butter in a large bowl with an electric mixer on medium speed for about 3 minutes or until it becomes light and fluffy. Gradually add the powdered sugar, one cup at a time, mixing well after each addition. Finally, stir in the vanilla extract and heavy cream or milk until you reach your desired consistency for spreading.
8. Once the cakes have completely cooled, its time to assemble! Start by stacking the layers in rainbow order. Spread a thin layer of frosting between each layer, then coat the entire cake with a crumb coat, a light layer of frosting to catch any crumbs. Chill the cake in the refrigerator for about 30 minutes to set this layer.
