Soft Ricotta Italian Christmas Cookies with Almond Glaze
Deliciously soft and sweet Italian cookies made with ricotta cheese, topped with a fragrant almond glazeperfect for your holiday celebrations!
Ingredients:
For the cookies:
– 2 1/2 cups all-purpose flour
– 1 1/2 tsp baking powder 療
– 1/2 tsp salt 蓼
– 1 cup ricotta cheese 燎
– 1/2 cup sugar
– 1/2 cup unsalted butter, softened 杻
– 2 large eggs 讀
– 1 tsp vanilla extract
– 1 tsp almond extract
For the almond glaze:
– 1 cup powdered sugar
– 2 tbsp milk 拏
– 1 tsp almond extract
– Sprinkles optional
Directions:
1. Preheat oven to 350F 175C. Line a baking sheet with parchment paper. 六
2. In a bowl, mix flour, baking powder, and salt. Set aside.
3. In another bowl, beat together ricotta, sugar, butter, eggs, vanilla, and almond extract until smooth and creamy. 療
4. Gradually mix the dry ingredients into the wet ingredients until combined. The dough will be soft.
5. Scoop tablespoon-sized portions of dough onto the baking sheet, spacing them about 2 inches apart.
6. Bake for 12-15 minutes or until the edges are lightly golden. Let them cool completely.
7. To make the glaze, whisk powdered sugar, milk, and almond extract together until smooth. 籠
8. Dip each cooled cookie into the glaze and top with sprinkles if desired. Let the glaze set.
