Savor the warmth of comfort food with this hearty smothered chicken and rice dish! Perfect for family gatherings or cozy nights in.
Ingredients:
– 1 can 10.75 oz cream of chicken soup
– 1 cup long-grain white rice, uncooked
– 4 boneless, skinless chicken breasts
– 1 can 10.75 oz cream of mushroom soup
– 1 can 14 oz chicken broth
– 1 tablespoon olive oil
– Salt and pepper to taste
– 1 teaspoon garlic powder
– 1 teaspoon paprika
– 1 onion, chopped
– 1 green bell pepper, chopped
Instructions:
1. Start by preheating your oven to 350F 175C. This will ensure your dish bakes evenly and thoroughly.
2. In a large skillet, heat the olive oil over medium-high heat. Season the chicken breasts with salt, pepper, garlic powder, and paprika for added flavor. Once the oil is hot, add the chicken and sear for about 2-3 minutes on each side until they achieve a lovely golden-brown color.
3. Once browned, carefully remove the chicken from the skillet and set it aside on a plate.
4. In the same skillet, add the chopped onion and bell pepper. Sauté them for about 5 minutes or until they soften and become fragrant.
5. While the vegetables are cooking, grab a mixing bowl and combine the cream of chicken soup, cream of mushroom soup, and chicken broth. Mix well until smooth. Then, stir in the uncooked rice.
6. In a baking dish, start layering your ingredients by spreading the sautéed onions and bell peppers on the bottom. Place the browned chicken on top of the vegetables.
7. Pour the soup and rice mixture evenly over the chicken, making sure its well distributed.
8. Cover the baking dish tightly with aluminum foil to keep everything moist while it bakes.
9. Place the dish in your preheated oven and bake for about 60 minutes. Check to ensure the rice is tender and the chicken is cooked through.
10. Once done, let it cool for a few minutes, then serve this delightful meal to your loved ones and enjoy the compliments!
