Slow Cooker Pineapple Pork Loin: A Sweet and Savory Delight!

Ingredients:

2-3 lbs pork loin, trimmed of excess fat

2 tablespoons vegetable oil

Salt and pepper, to taste

8 cloves garlic, minced

cup soy sauce

cup brown sugar

1 can 23.5 oz pineapple chunks with juice

Instructions:


Prepare the Pork:

Trim any excess fat from the pork loin, then season generously with salt and pepper.

Brown the Pork:

Heat the vegetable oil in a large skillet over medium-high heat. Once hot, sear the pork loin on all sides until golden brown, about 2-4 minutes per side.

Slow Cook the Pork:

Transfer the browned pork to the slow cooker. Spread the minced garlic over the pork, then pour in the soy sauce and add the pineapple chunks along with their juice. Sprinkle the brown sugar evenly on top.

Cook:

Cover and cook on low for 4-6 hours if you prefer the pork loin sliced. For a tender, shredded texture, cook on low for 8-10 hours, occasionally basting the pork with the cooking juices. Once shredded, return the pork to the slow cooker for an additional hour on low to absorb more flavor.
