One-Pot Chicken Parmesan Pasta
Ingredients:
1 lb diced chicken breasts
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon Italian seasoning
Salt and pepper, to taste
4 cups chicken broth
12 oz penne or rotini pasta
1 cup marinara sauce
1 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
Fresh basil for garnish optional
Instructions:
Cook the Chicken:
Heat the olive oil in a large pot over medium heat. Add the diced chicken, minced garlic, Italian seasoning, salt, and pepper. Sauté for 5-7 minutes until the chicken is cooked through and no longer pink.
Add Broth and Pasta:
Pour in the chicken broth and bring to a boil. Stir in the pasta and marinara sauce, then reduce the heat to a simmer.
Cook the Pasta:
Cover the pot and cook for 12-15 minutes, stirring occasionally, until the pasta is al dente and most of the liquid has been absorbed.
Add the Cheese:
Remove the pot from heat and stir in the Parmesan and mozzarella cheese until melted and creamy.
Garnish and Serve:
Sprinkle with fresh basil for an extra burst of flavor, if desired. Serve warm and enjoy!
