Slow Cooker Homemade Beans
Ingredients:
2 cups dried beans navy beans, pinto beans, or your choice, rinsed and soaked overnight1 medium onion, chopped3 cloves garlic, minced1 can 14.5 oz diced tomatoes1/4 cup tomato paste1 tablespoon brown sugar1 tablespoon apple cider vinegar1 teaspoon ground cumin1/2 teaspoon paprikaSalt and pepper to taste6 cups water or vegetable broth
Instructions:
Add the soaked and drained beans to the slow cooker.Stir in the chopped onion, garlic, diced tomatoes, tomato paste, brown sugar, apple cider vinegar, cumin, paprika, salt, and pepper.Pour in the water or vegetable broth and stir to combine.Cover and cook on low for 6-8 hours, or until the beans are tender and the flavors have melded together.Adjust seasoning with salt and pepper before serving.
