Slow Cooker Beef Barley Soup

Ingredients:

1 lb beef stew meat, cubed

1/2 cup pearl barley

4 cups beef broth

3 carrots, sliced

2 celery stalks, diced

1 onion, chopped

3 garlic cloves, minced

2 bay leaves

1 tsp dried thyme


Salt and pepper, to taste

Directions:

Place beef, barley, carrots, celery, onion, and garlic into the crock-pot.

Add broth, thyme, bay leaves, salt, and pepper.

Stir well, cover, and cook on low for 7-8 hours or high for 4-5 hours, until beef is tender.

Remove bay leaves, adjust seasoning, and serve warm.
