Sheet Pan Shrimp Fajitas
Ingredients:
1 lb large shrimp, peeled and deveined3 bell peppers red, yellow, and green, sliced1 large onion, sliced2 tablespoons olive oil1 tablespoon chili powder1 teaspoon cumin1 teaspoon smoked paprika1/2 teaspoon garlic powder1/2 teaspoon onion powderSalt and pepper to tasteJuice of 1 limeWarm tortillas for serving
Instructions:
Preheat oven to 425F 220C and line a sheet pan with parchment paper.In a large bowl, toss shrimp, bell peppers, and onion with olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper.Spread the mixture evenly on the sheet pan.Bake for 10-12 minutes, or until the shrimp are cooked and the veggies are tender.Squeeze fresh lime juice over the fajita mixture before serving.Serve with warm tortillas and your favorite toppings like sour cream, guacamole, or salsa.
