Ingredients:

4 boneless, skinless chicken thighs2 cups baby potatoes, halved1 cup bell peppers, sliced1/2 cup red onion, sliced2 tbsp olive oil2 tbsp harissa paste1 tsp garlic powder1/2 tsp cuminSalt and pepper to tasteFresh cilantro for garnish


Instructions:

Preheat oven to 400F 200C and line a sheet pan with parchment paper.In a small bowl, mix olive oil, harissa paste, garlic powder, cumin, salt, and pepper.Coat the chicken thighs with the harissa mixture, then arrange on the sheet pan with potatoes, bell peppers, and red onion.Drizzle any remaining harissa mixture over the vegetables.Roast for 25-30 minutes, flipping the chicken halfway, until the chicken is cooked through and the vegetables are tender.Garnish with fresh cilantro and serve hot!
