Ingredients:

4 boneless, skinless chicken breasts, sliced2 bell peppers red and yellow, sliced1 large onion, sliced3 tbsp olive oil1 tbsp chili powder1 tsp cumin1 tsp smoked paprika1/2 tsp garlic powderSalt and pepper to tasteTortillas, for servingLime wedges and fresh cilantro for garnish


Instructions:

Preheat oven to 400F 200C and line a sheet pan with parchment paper.In a large bowl, combine chicken, bell peppers, onion, olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Toss until evenly coated.Spread the mixture evenly onto the sheet pan.Roast for 20-25 minutes, stirring halfway, until the chicken is fully cooked and vegetables are tender.Serve with warm tortillas, lime wedges, and a sprinkle of fresh cilantro.
