Seared Scallops with Creamy Pasta
Ingredients:
1 lb scallops, patted dry
2 tbsp olive oil
2 tbsp unsalted butter
Salt and pepper, to taste
1 lb pasta fettuccine or linguine
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 garlic cloves, minced
1/2 tsp Italian seasoning
Fresh parsley, chopped, for garnish
Instructions:
1. Cook the pasta according to package instructions. Drain and set aside.
2. Heat olive oil and butter in a skillet over medium-high heat. Season the scallops with salt and pepper, then sear for 2-3 minutes on each side until golden brown. Remove and set aside.
3. In the same skillet, add minced garlic and sauté until fragrant. Pour in the heavy cream and stir in Parmesan cheese and Italian seasoning. Let the sauce simmer for 3-4 minutes.
4. Toss the cooked pasta in the creamy sauce until well-coated.
5. Serve the pasta topped with the seared scallops. Garnish with freshly chopped parsley.
