Roast Lamb with Vegetables
Ingredients:
1 leg of lamb approximately 2.5 kg
500g baby potatoes, halved
3 large carrots, sliced
4 garlic cloves, minced
2 tbsp olive oil
2 tsp dried rosemary
2 tsp dried thyme
Salt and black pepper to taste
1 cup chicken or beef broth
Instructions:
1. Preheat Oven:
Preheat your oven to 180C 350F.
2. Prepare the Lamb:
Rub the lamb with olive oil, garlic, rosemary, thyme, salt, and pepper. Place it in a large roasting pan.
3. Add the Vegetables:
Arrange the potatoes and carrots around the lamb in the pan. Drizzle with olive oil and season with salt and pepper.
4. Roast the Lamb:
Pour the broth into the pan to keep the meat moist. Roast in the oven for 1.5 to 2 hours, basting occasionally with the pan juices.
5. Rest and Serve:
Let the lamb rest for 15 minutes before slicing. Serve with the roasted vegetables and pan juices.
