Seafood Stuffed Shells
Ingredients:
20 jumbo pasta shells
1 lb shrimp, peeled, deveined, and chopped
lb lump crab meat
1 cup ricotta cheese
cup grated Parmesan cheese
1 cup shredded mozzarella cheese divided
1 egg
1 teaspoon garlic powder
1 teaspoon onion powder
teaspoon salt
teaspoon black pepper
2 tablespoons fresh parsley, chopped
1 tablespoon lemon juice
2 tablespoons butter
For the Garlic Alfredo Sauce:
2 tablespoons butter
2 cloves garlic, minced
1 cups heavy cream
cup grated Parmesan cheese
teaspoon salt
teaspoon black pepper
Directions:
Preheat oven to 375F 190C. Cook pasta shells according to package instructions until al dente. Drain and set aside.
In a skillet, melt 2 tablespoons butter over medium heat. Add shrimp and cook for 2-3 minutes, until opaque. Remove from heat and let cool.
In a large bowl, mix ricotta, cup mozzarella, Parmesan, egg, garlic powder, onion powder, salt, black pepper, parsley, and lemon juice. Stir in the cooked shrimp and crab meat.
Stuff each shell with the seafood mixture and place them in a greased 9×13-inch baking dish.
To prepare the sauce, melt 2 tablespoons butter in a saucepan over medium heat. Add minced garlic and cook for 30 seconds until fragrant.
Pour in heavy cream, stir, and let simmer for 2-3 minutes. Add Parmesan cheese, salt, and black pepper, stirring until the sauce thickens.
Pour the Alfredo sauce evenly over the stuffed shells and sprinkle the remaining cup mozzarella on top.
Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 5-10 minutes until cheese is golden and bubbly.
Garnish with fresh parsley and serve hot.
