Saltine Cracker Toffee
Ingredients:
1 sleeve about 40 Saltine crackers
1 cup unsalted butter
1 cup packed brown sugar
2 cups semisweet chocolate chips
1/2 tsp vanilla extract
1/2 cup chopped nuts optional, e.g., pecans or walnuts
Instructions:
Preheat oven to 350F 175C. Line a baking sheet with aluminum foil or parchment paper and arrange the Saltine crackers in a single layer, covering the entire sheet.
In a saucepan, melt the butter and brown sugar together over medium heat, stirring constantly. Once the butter is melted and the sugar is dissolved, bring the mixture to a gentle boil. Let it boil for 3 minutes without stirring.
Pour the toffee mixture evenly over the Saltine crackers, making sure they are completely coated.
Bake in the preheated oven for 5-7 minutes until the toffee is bubbly.
Remove from the oven and sprinkle the chocolate chips on top. Let them sit for a few minutes to soften, then spread the melted chocolate into an even layer.
If desired, sprinkle chopped nuts on top of the chocolate while its still soft.
Allow the toffee to cool completely at room temperature, or place it in the fridge for faster setting. Once set, break it into pieces.
