No-Bake Chocolate Cheesecake

Ingredients:

1 1/2 cups chocolate wafer cookies, crushed

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

16 oz cream cheese, softened

1 cup heavy whipping cream

1 cup powdered sugar

1/2 cup cocoa powder

1 tsp vanilla extract

4 oz semisweet chocolate, melted


Instructions:

In a medium bowl, combine crushed chocolate wafer cookies, sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Place the crust in the fridge to set for 15-20 minutes.

In a separate large bowl, beat the softened cream cheese until smooth. Add powdered sugar, cocoa powder, and vanilla extract, and beat until well combined.

In a separate bowl, whip the heavy cream until stiff peaks form, then fold it into the cream cheese mixture.

Add melted semisweet chocolate to the mixture and gently stir until fully combined.

Pour the chocolate filling over the chilled crust and spread it evenly.

Refrigerate for at least 4 hours, or overnight, until fully set.

Before serving, optionally top with whipped cream, chocolate shavings, or more crushed cookies.
