Rotel Dip with Beef
This creamy, cheesy dip with a hint of spice is perfect for parties, game day, or any gathering. Just a few ingredients and your slow cooker will handle the rest, giving you a rich, flavorful dip that stays warm for hours.
Ingredients:
1 lb ground beef, cooked and drained
16 oz Velveeta cheese, cut into 1-inch cubes
2 cans 10 oz each Rotel diced tomatoes and green chilies undrained
2 tsp chili powder
1/4 tsp garlic powder
Directions:
Prepare the Ground Beef:
In a skillet over medium-high heat, add the ground beef and cook until fully browned, breaking it into small crumbles with a spatula. Season with a pinch of salt and pepper if desired. Once cooked, drain any excess fat and set the beef aside.
Assemble Ingredients in the Slow Cooker:
Place the cooked ground beef in the slow cooker. Add the cubed Velveeta cheese, making sure to scatter it evenly over the beef. Pour in the two cans of Rotel undrained over the top. Add the chili powder and garlic powder for extra flavor.
Cook the Dip:
Cover the slow cooker with the lid and set it to HIGH. Cook for about 2 hours, stirring every 30 minutes to ensure the cheese melts evenly and the flavors mix well. This will prevent any sticking and ensure a creamy texture.
Check Consistency and Serve:
Once the cheese has completely melted and the dip is smooth, give it a final stir to blend all ingredients thoroughly. If the dip is too thick, you can add a few tablespoons of milk to adjust the consistency. Turn the slow cooker to the WARM setting to keep the dip at the perfect temperature for serving.
Serve and Enjoy:
Serve the dip directly from the slow cooker to keep it warm, with tortilla chips, crackers, or sliced veggies on the side. Enjoy this crowd-pleasing, cheesy dip!
