Roasted Cranberry and Goat Cheese Flatbread

Ingredients:

1 pre-made pizza dough or flatbread base

1 cup fresh cranberries

1 tablespoon olive oil

1 tablespoon honey

1 teaspoon balsamic vinegar

4 ounces goat cheese, crumbled

1/2 cup mozzarella cheese, shredded

1/4 teaspoon dried thyme

1/4 teaspoon black pepper

1 tablespoon fresh rosemary, chopped


1/4 cup walnuts, chopped optional

Arugula or baby greens for garnish

Directions:

Preheat the Oven: Preheat your oven to 400F 200C. Line a baking sheet with parchment paper or a lightly greased baking tray.

Roast the Cranberries: In a small bowl, toss the fresh cranberries with olive oil, honey, and balsamic vinegar. Spread them evenly on the prepared baking sheet and roast in the oven for about 10 minutes, or until they start to burst and become slightly soft.

Prepare the Flatbread: Roll out your pizza dough or use a pre-made flatbread. Place it on a separate baking sheet. Brush the top with a little olive oil to help it crisp up in the oven.

Assemble the Flatbread: Scatter the roasted cranberries evenly over the flatbread. Add the crumbled goat cheese and shredded mozzarella cheese on top. Sprinkle with dried thyme, black pepper, and fresh rosemary. If using, sprinkle the chopped walnuts over the flatbread for an added crunch.

Bake the Flatbread: Place the assembled flatbread in the oven and bake for 12-15 minutes, or until the cheese is melted and bubbly, and the crust is golden brown.

Add Fresh Greens and Serve: Once out of the oven, garnish the flatbread with fresh arugula or baby greens for a pop of color and freshness. Slice and serve immediately.
