Rice Krispie Cheesecake
Ingredients
For the Rice Krispie Base:
3 cups Rice Krispies cereal
1/4 cup butter 杻
1 package 10 oz marshmallows
For the Cheesecake Filling:
16 oz cream cheese, softened 燎
1 cup powdered sugar
1 tsp vanilla extract
1 1/2 cups heavy whipping cream, cold 拏
1 tbsp lemon juice optional, for a slight tang
Instructions
1 Prepare the Rice Krispie Base:
Melt the butter in a large pot over medium heat.
Add the marshmallows and stir until fully melted and combined with the butter.
Remove from heat and quickly mix in the Rice Krispies until evenly coated.
Press the mixture firmly into the bottom of a greased 9-inch springform pan to form a base. Let it cool.
2 Prepare the Cheesecake Filling:
In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
In a separate bowl, whip the heavy whipping cream until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture until fully combined.
3 Assemble:
Pour the cheesecake filling over the Rice Krispie base and spread it evenly.
Cover and refrigerate for at least 4 hours or until set.
4 Serve:
Once set, carefully remove the cheesecake from the springform pan. Slice and serve this delightful, crunchy, and creamy dessert!
