Refried Beans Without the Refry
Ingredients:
2 cans 15 oz each pinto beans, drained and rinsed1/4 cup onion, finely chopped2 cloves garlic, minced1/2 cup vegetable broth or water1 tbsp olive oil1/2 tsp cumin1/2 tsp chili powderSalt and pepper to taste1/4 cup fresh cilantro, chopped optional
Instructions:
In a medium skillet, heat olive oil over medium heat. Add onions and garlic, sauté until softened.Stir in cumin, chili powder, salt, and pepper. Cook for 1 minute.Add pinto beans and vegetable broth. Stir to combine and cook for 5-7 minutes, until heated through.Using a potato masher or fork, mash the beans to your desired consistency.Stir in fresh cilantro if using and adjust seasoning as needed.
