Red Velvet Wreath Cake
Ingredients:
For the Red Velvet Bundt Cake:
2 cups all-purpose flour
1 cups granulated sugar
1 tsp baking soda
2 tbsp cocoa powder
1 cups vegetable oil
1 cup buttermilk, room temperature
2 large eggs, room temperature
2 tbsp red food coloring
1 tsp vanilla extract
1 tsp white vinegar
For the Cream Cheese Frosting:
8 oz cream cheese, softened
cup unsalted butter, softened
2 cups powdered sugar
1 tsp vanilla extract
For Decorations:
Fresh cranberries or sugared cranberries for a frosty look
Small sprigs of rosemary to mimic evergreen leaves
Powdered sugar for a snow-dusted effect
Directions:
Preheat Oven and Prepare Bundt Pan:
Preheat your oven to 350F 175C.
Grease and flour a Bundt pan thoroughly to prevent sticking.
Make the Red Velvet Cake:
In a large bowl, sift together the flour, granulated sugar, baking soda, salt, and cocoa powder.
In another bowl, whisk together the oil, buttermilk, eggs, red food coloring, vanilla extract, and vinegar.
Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
Bake the Cake:
Pour the batter into the prepared Bundt pan, smoothing the top.
Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for 10 minutes, then carefully invert it onto a wire rack to cool completely.
Prepare the Cream Cheese Frosting:
In a medium bowl, beat the cream cheese and butter together until smooth and creamy.
Gradually add the powdered sugar and vanilla extract, beating until the frosting is thick and fluffy.
Transfer the frosting to a piping bag fitted with a large star tip.
Decorate the Cake:
Once the cake has cooled completely, pipe swirls of cream cheese frosting around the top of the Bundt cake to resemble a holiday wreath.
Arrange fresh cranberries and rosemary sprigs on the frosting to mimic holly and evergreen leaves.
Lightly dust with powdered sugar for a festive, snow-dusted effect.
Serve:
Carefully transfer the cake to a serving plate or cake stand. Slice and serve this showstopping dessert at your holiday gathering!
