Quinoa Side Dish
Ingredients:
1 cup quinoa2 cups vegetable broth or water1 tbsp olive oil1/2 cup chopped red bell pepper1/4 cup chopped fresh parsley1 tbsp lemon juiceSalt and pepper to taste
Instructions:
Rinse quinoa under cold water to remove any bitterness.In a medium saucepan, bring vegetable broth or water to a boil.Add quinoa, reduce heat, cover, and simmer for 15-20 minutes, or until all liquid is absorbed and quinoa is tender.Fluff quinoa with a fork, then stir in olive oil, red bell pepper, parsley, and lemon juice.Season with salt and pepper to taste, and serve.
