Pumpkin Spice Cheesecake-Stuffed Sugar Cookies

Ingredients
For the Cheesecake Filling:
4 oz cream cheese, softened 燎
cup granulated sugar
2 tbsp pumpkin purée
tsp pumpkin pie spice
tsp vanilla extract
For the Sugar Cookie Dough:
cup unsalted butter, softened 杻
1 cup granulated sugar
1 large egg 讀
1 tsp vanilla extract
2 cups all-purpose flour
tsp baking soda 籠
tsp baking powder 籠
tsp salt 蓼
1 tsp pumpkin pie spice optional, for extra fall flavor
For Rolling:
cup granulated sugar
tsp pumpkin pie spice
Directions
Prepare the Cheesecake Filling:
1 In a small bowl, beat together cream cheese, sugar, pumpkin purée, pumpkin pie spice, and vanilla extract until smooth.
2 Scoop small dollops about 1 teaspoon each onto a parchment-lined plate or tray. Freeze for at least 30 minutes, until firm.
Make the Sugar Cookie Dough:
3 In a large mixing bowl, beat the butter and sugar until light and fluffy.
4 Add the egg and vanilla extract, mixing until combined.
5 In a separate bowl, whisk together flour, baking soda, baking powder, salt, and pumpkin pie spice.
6 Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
Assemble the Stuffed Cookies:
7 Preheat oven to 350F 175C and line a baking sheet with parchment paper.
8 Scoop about 1 tablespoons of cookie dough and flatten it slightly in your hand.
9 Place a frozen cheesecake dollop in the center and wrap the dough around it, sealing the edges.
In a small bowl, mix the rolling sugar with pumpkin pie spice. Roll each stuffed cookie ball in the spiced sugar mixture.
Bake the Cookies:
