Pumpkin Cinnamon Swirl Cheesecake
This Pumpkin Cinnamon Swirl Cheesecake is a dreamy combination of rich pumpkin spice flavor, velvety cheesecake, and warm cinnamon swirlstopped with a drizzle of spiced glaze and whipped cream!
Ingredients:
For the Crust:
2 cups graham cracker crumbs
cup brown sugar
cup unsalted butter, melted
1 tsp cinnamon
For the Pumpkin Cheesecake Filling:
24 oz cream cheese, softened
1 cup granulated sugar
1 cup pumpkin purée not pumpkin pie filling
3 large eggs
cup sour cream
1 tsp vanilla extract
1 tsp pumpkin pie spice
tsp ground cinnamon
For the Cinnamon Swirl:
cup brown sugar
1 tsp cinnamon
1 tbsp melted butter
For the Spiced Glaze:
cup powdered sugar
1 tbsp maple syrup
1 tbsp heavy cream
tsp cinnamon
For the Topping:
Whipped cream
Extra cinnamon sugar for dusting
Instructions:
1 Prepare the Crust:
Preheat oven to 325F 163C.
Mix graham cracker crumbs, brown sugar, cinnamon, and melted butter in a bowl.
Press the mixture into the bottom of a 9-inch springform pan and bake for 8-10 minutes. Let cool.
2 Make the Cheesecake Filling:
In a large bowl, beat cream cheese and sugar until smooth.
Add pumpkin purée, eggs one at a time, sour cream, and vanilla.
Mix in pumpkin pie spice and cinnamon.
3 Create the Cinnamon Swirl:
In a small bowl, mix brown sugar, cinnamon, and melted butter.
Pour half of the cheesecake batter into the cooled crust, then drizzle half of the cinnamon swirl mixture over the top.
Add the remaining cheesecake batter and drizzle the rest of the cinnamon swirl.
Use a toothpick or knife to gently swirl the cinnamon mixture into the batter.
4 Bake the Cheesecake:
Bake for 50-55 minutes, or until the center is slightly set.
Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour.
Refrigerate for at least 4 hours or overnight.
5 Make the Spiced Glaze:
Whisk together powdered sugar, maple syrup, heavy cream, and cinnamon until smooth.
6 Assemble:
Drizzle with spiced glaze, top with whipped cream, and sprinkle extra cinnamon sugar before serving!
Pro Tips:
For extra flavor, toast the crust in the oven for a richer, nuttier taste.
