Banana Pudding Cheesecake

Ingredients:
For the Crust:
2 cups vanilla wafer crumbs
cup granulated sugar
cup unsalted butter, melted
For the Cheesecake Filling:
24 oz cream cheese, softened
1 cup granulated sugar
3 large eggs
2 ripe bananas, mashed
1 tsp vanilla extract
cup sour cream
cup heavy cream
1 box 3.4 oz banana pudding mix
1 cup vanilla wafer cookies, whole
For the Whipped Cream Topping:
1 cup heavy whipping cream
cup powdered sugar
tsp vanilla extract
Extra vanilla wafer crumbs, for garnish
Instructions:
1 Prepare the Crust:
Preheat oven to 325F 163C.
Mix crushed vanilla wafers, sugar, and melted butter in a bowl.
Press into a 9-inch springform pan and bake for 10 minutes. Let cool.
2 Make the Cheesecake Filling:
Beat cream cheese and sugar until smooth.
Add eggs, one at a time, mixing gently.
Stir in mashed bananas, vanilla extract, sour cream, and heavy cream.
Mix in banana pudding mix until fully combined.
Fold in whole vanilla wafers into the batter for extra texture.
Pour into the cooled crust and bake for 50-55 minutes until the center is just set.
Turn off the oven, crack the door open, and let it cool inside for 1 hour.
Chill in the refrigerator for at least 4 hours or overnight.
3 Make the Whipped Cream Topping:
Beat heavy cream, powdered sugar, and vanilla until stiff peaks form.
4 Assemble:
Pipe or spread whipped cream on top of the cheesecake.
Sprinkle with vanilla wafer crumbs.
