Pumpkin Cinnamon Crumble Cookies

Ingredients:
For the Cookies:
1 cup unsalted butter, softened
1 cup granulated sugar
cup brown sugar
1 cup pumpkin puree
1 large egg
2 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking soda
1 tsp baking powder
1 tsp ground cinnamon
tsp ground nutmeg
tsp ground ginger
tsp ground cloves
tsp salt
For the Crumble Topping:
cup all-purpose flour
cup brown sugar
cup granulated sugar
tsp ground cinnamon
cup unsalted butter, cold and cubed
Instructions:
Preheat the Oven
Preheat your oven to 350F 175C.
Cream the Butters and Sugars
In a large bowl, beat together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
Add Wet Ingredients
Mix in the pumpkin puree, egg, and vanilla extract until well combined.
Combine Dry Ingredients
In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, cloves, and salt.
Mix Together
