Potato Pancakes with Savory Beef and Cheese

Ingredients:

4 large potatoes, peeled and grated

1 small onion, grated

2 eggs

3 tablespoons all-purpose flour

Salt and pepper to taste

1/2 teaspoon garlic powder

1/2 teaspoon paprika

1/2 pound ground beef

1 tablespoon olive oil

1/2 teaspoon Worcestershire sauce

1/2 cup shredded cheddar cheese


2 tablespoons chopped parsley

Sour cream for serving

Directions:

Place grated potatoes in a clean kitchen towel and squeeze out excess moisture.

In a large bowl, mix potatoes, grated onion, eggs, flour, salt, pepper, garlic powder, and paprika until well combined.

Heat a non-stick skillet over medium heat with a little oil. Drop spoonfuls of the potato mixture into the skillet, flattening them into pancakes. Cook for 3-4 minutes per side until golden and crispy. Set aside.

In the same skillet, heat 1 tablespoon of olive oil and cook ground beef with Worcestershire sauce, salt, and pepper until browned.

Sprinkle shredded cheese over warm potato pancakes and top with cooked beef. Allow cheese to melt slightly.

Garnish with chopped parsley and serve with a dollop of sour cream.
