Plum Jam Cookies

Sweet Delights: Plum Jam-Filled Cookies

Ingredients:

1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

2 teaspoons vanilla extract

2 1/2 cups all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

Plum jam for filling

Powdered sugar for dusting

Directions:

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

Add the egg and vanilla extract to the creamed mixture, mixing until well combined.


In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.

Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for 1 hour.

Preheat your oven to 350F 175C and line a baking sheet with parchment paper.

Roll out the dough on a floured surface to about 1/4-inch thickness.

Use a round cookie cutter to cut out circles from the dough.

Place half of the circles on the prepared baking sheet.

Add a small dollop of plum jam in the center of each circle.

Top with the remaining circles, pressing the edges to seal.

Bake for 12-15 minutes or until the cookies are golden.

Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Dust with powdered sugar before serving.
