Pineapple Layer Cake
Ingredients:
For the Cake:
2 1/2 cups all-purpose flour
2 1/2 tsp baking powder 籠
1/2 tsp salt 蓼
1 cup unsalted butter, softened 杻
2 cups granulated sugar
4 large eggs 讀
1 tsp vanilla extract
1 cup pineapple juice
For the Frosting:
1 cup unsalted butter, softened 杻
4 cups powdered sugar
1/4 cup pineapple juice
1 tsp vanilla extract
For Garnish:
Fresh pineapple slices
Instructions:
1. Prepare the Cake Layers:
Preheat oven to 350F 175C. Grease and flour two 9-inch round cake pans.
In a bowl, whisk flour, baking powder, and salt. 籠蓼
In another bowl, cream butter and sugar until fluffy. Add eggs one at a time, then vanilla extract. 杻讀
Alternate adding the dry ingredients and pineapple juice to the butter mixture, starting and ending with dry ingredients.
Divide batter evenly between the pans. Bake for 25-30 minutes or until a toothpick comes out clean. Let cool completely.
2. Make the Frosting:
Beat butter until creamy. Gradually add powdered sugar, pineapple juice, and vanilla extract until smooth. 杻
3. Assemble the Cake:
Place one cake layer on a plate. Spread frosting on top. Place the second layer and frost the entire cake.
Decorate with fresh pineapple slices on top.
Serve chilled or at room temperature for a tropical delight!
